500g ground chicken
1/2 onion, grated
1 carrot, finely grated
1/2 capsicum finely chopped
1 Tbs finely chopped herbs
1 Tbs greek yoghurt
2 eggs
1 potato, baked peeled and mashed
salt and pepper to taste
Mix all together and divide evenly between 12 greased muffin cups (I use the silicone ones). Bake for 20 minutes at 200*C
