Spinach and basil pesto

1 cup fresh spinach leaves
1 cup basil leaves
1/2 cup grated parmesan 
1 Tbs olive oil
1 Tbs grated garlic
1/4 cup chicken broth
1 tsp dry chia seeds

Process spinach, basil and garlic.  Add olive oil, Parmesan, broth and chia and process until it forms a paste.

  1. What a wonderful idea. Are you using baby spinach leaves or could it be any silverbeet or large spinach leaf in this paste? Adding chicken broth and chia seeds is unusual but I love the idea, a moist pesto without too much oil. Thank you for sharing :D
